Thai ingredients such as pepper, cardamom, ginger, lemon grass and many others are said to have healthy properties. Just searching the internet, you can find about the digestive qualities of ginger. It's claimed herbs and spices have antibacterial and antiviral properties and that cinnamon lowers blood sugar levels and has a powerful anti-diabetic effect. You can find it said that sage can improve brain function and memory turmeric contains curcumin, a substance with powerful anti-inflammatory effects.... why not search these for yourself.
I will always source the best, fresh ingredients but as you see above, the dishes I prepare can have more than 20 ingredients.
